Fruits and vegetables are collected when at their best then processed on site without preservatives, from the freshest ripe ingredients. White wine vinegar adds a balance to the natural sweetness of red onions giving this thick onion jam a lovely bittersweet taste that complements grilled meats or good hard cheeses like an aged cheddar, comté, cantal or pecorino.
