The Hausa, an ethnic group living in various parts of Africa, have had a major influence on African cuisine. One of their most famous dishes, especially popular as a late breakfast, is Hausa Koko. Hausa Koko is a millet porridge that tastes slightly sour and spicy because it is usually mixed with ginger and pepper. Most often, Hausa Koko is served with a fried cake made from bean flour (called koose or akara) or a Nigerian snack called puff puff (consists mainly of flour, sugar and ground nuts). Hausa Koko Flour from Ghana consists of millet flour, sorghum flour, ginger and pepper and is therefore naturally gluten-free* and a great, exotic alternative to semolina porridge!
